I found a big can of bread crumbs that I had forgotten about in the pantry. Not knowing what to do with them, I decided to make all the recipes on the can’s label. The result wasn’t very tasty in my opinion, except for the breaded eggplants, which were delicious.
Baked Tomatoes with Garlic Basil Bread Crumb
Cut four medium tomatoes in half and place them on a baking tray cut side up. Cut a small slice off the bottoms so that they won’t roll around. Mix 1/2 cup bread crumb, 1/2 tsp garlic powder, a chopped green onion, two teaspoons of dried basil, a dash of salt, and 1/4 cup of extra virgin olive oil (EVOO). Top the tomato halves with the crumb mixture and bake at 425 degrees for about 7 minutes.
Tastiness: 6/10
Turkey Meatloaf
Mix 1 pound of ground turkey, 1 cup of bread crumbs, 1/4 cup of skim milk, 1/2 tsp salt, 1/2 tsp Italian seasoning, 1 cup of grated zucchini, and 1 cup of finely chopped onion. Press mixture into a greased 9x5x3-inch baking pan and top with 3/4 cup of marinara sauce. Bake for an hour at 350 degrees.
Doesn’t taste all that great… 5/10
Southwestern Meatloaf
Mix 1 pound of ground beef, 1 cup bread crumbs, 1/4 cup skim milk, two eggs, 1/2 cup southwest salsa, two teaspoons of chili powder, and a can of drained black beans. Press mixture into a 9x5x3-inch greased baking pan and top with salsa. Bake for 1 hour at 350 degrees.
It could use more flavor… 6/10
Crispy Baked Eggplant
Preheat oven 425 degrees. Mix 1/2 cup bread crumbs, 3 tbsp grated Parmesan cheese, two teaspoons of dried basil, 1/2 tsp garlic powder, and 1/2 tsp salt in a shallow dish. Slice a medium-sized eggplant crosswise into about 12 slices. Dip both sides of the eggplant slices into mayonnaise and then coat with bread crumb mixture. Place slices on a greased baking sheet and bake for 12 minutes. Turn and bake for an additional 5 minutes.
Delicious when fresh, no good when reheated in the microwave… 8/10
